NATCHITOCHES -Chef John Folse will premiere the Cane River Creole segment of his newly developed Louisiana Public Broadcasting series on Louisiana cuisine Wednesday, Sept. 27, at 6 p.m. in the Reading Room of Northwestern State University's Watson Library.

Tickets for the event are $50. Proceeds benefit the Creole Heritage Foundation. Tickets are available at the door, in advance at the NSU Creole Heritage Center in Room 116 of Keyser Hall or by calling (318) 357-6685.

In addition to the screening, Folse, along with local cooks, will present a demonstration featuring recipes from the Creole community. The event will also include a Creole buffet and book signing by Folse.

The filming of the "Louisiana's Food Heritage: The Encyclopedia Series" was recently completed and will begin airing on the LPB network in October. The new series, the eleventh collaboration between Chef Folse & LPB, is the companion to Folse's best-selling cookbook, "The Encyclopedia of Cajun & Creole Cuisine." Other areas of Natchitoches Parish included in the series are Fort St. Jean Baptiste and Fort Los Adaes.

Location shots for this segment of the series were filmed at the historic Melrose Plantation on Cane River. With the plantation as a backdrop, Folse talks about the Cane River Creole culture. Once a forgotten people, the Creoles of Cane River have preserved their culture through faith, tradition and a strong sense of family. The family unit is as solid today as it was when their ancestors, Marie Therese Coincoin and Claude Thomas Metoyer, were alive.

Folse then joins locals Lillie Delphin in the kitchen as she prepares baked cushaw, and Terrel Delphin and his daughter Daphne, as they relate the story of their unique heritage from the home's library. Back in the studio, Willis Prudhomme entertains the Creoles of Cane River with traditional Zydeco music.
