NATCHITOCHES – Flavor of Louisiana, Northwestern State University’s biennial spring seafood festival, will return to Prather Coliseum Friday, March 20. Presented by the NSU Foundation, Flavor of Louisiana will feature dozens of vendors offering samplings of seafood dishes prepared by chefs and restaurateurs from around the state in a festival atmosphere with music and entertainment. All proceeds support scholarships for students, faculty development and academic program enhancements.
“We are happy to announce the return of Flavor of Louisiana, the NSU Foundation’s biggest and most popular fundraiser,” said Cristy Bernard, associate director of Alumni and Development. “Flavor of Louisiana draws a big crowd to enjoy a night of seafood and socializing to support NSU students and academic programs. We are looking forward to an evening of great food, music and fun for a cause.”

Crab claws from Savoie’s Catering in Shreveport was a popular dish at the 2024 Flavor of Louisiana.
More than 750 guests attended the 2024 event, which is now held on even years. The Foundation raised over $115,000.
In addition to delectable seafood dishes, vendors will offer barbecue and other options for non-seafood eaters, as well as specialty cocktails, craft beers, coffee, desserts and other treats with live music and dancing. Individual academic department and organizations will set up fundraiser tables with raffles, silent auctions and other fun features.
